Is the Apple Watch Series 7 Waterproof?

Yes the Apple Watch Series 7 is waterproof up to 50 meters. 

In fact the Apple Watch Series 7, Series 6, Series 5, Series 4, Apple Watch SE, and Apple Watch Series 3 all have a water resistance rating of 50 meters under ISO standard 22810:2010.

This means whilst the watch isn't fully waterproof, it gives you full resistance against water up to this level, which makes it perfect for walking in the rain or pool or sea swims.
